  • Pulled Pork:
  • 1½- pound Pork tenderloin
  • 1 large White onion cut in half and thinly sliced
  • 3 Garlic cloves smashed and peeled
  • 1 2-inch piece Ginger, peeled
  • ½ cup San-J Hoisin Sauce
  • 1 tablespoon Sriracha sauce
  • 2 cups Water
  • 8 Corn tortillas warmed
  • Mango Salsa:
  • 2 Ripe mangoes
  • 1 large Tomato seeded and diced
  • ¼ Red onion diced (about ⅓ cup diced)
  • 1 small Jalapeño pepper seeded, deveined, and minced
  • ½ cup Cilantro leaves chopped (measured then chopped)
  • Juice of 1 lime
  • Kosher or fine sea salt
  • Freshly ground black pepper
  • Avocado Crema:
  • 1 Ripe avocado
  • 2 tablespoons Sour cream
  • 3 – 4 tablespoons Milk
  • Kosher or fine sea salt
  • Freshly ground black pepper

Directions

  • Pulled Pork:
  • Cut the pork tenderloin into 2 – 3 inch pieces and place in a saucepan. Add the onion, garlic, ginger, San-J Hoisin Sauce, Sriracha sauce, and water. Bring to a boil over high heat. Cover the pan, lower the heat, and simmer for 1½ – 2 hours or until very tender. Remove the pork with a slotted spoon and transfer to a cutting board. Shred with two forks. Remove and discard the ginger and garlic. Bring the cooking liquid to a boil. Boil, uncovered, for 10 minutes or until it has reduced and thickened. Add the pork back to the liquid and cook, stirring, for 1 minute.
  • While the pork is cooking, make the salsa and crema. 
  • Mango Salsa:
  • Peel the mangos and cut the flesh off the seeds. Dice the flesh and add to a mixing bowl with the tomato, onion, jalapeño, cilantro, and lime juice. Season to taste with salt and pepper. Let sit at room temperature until serving or cover with plastic wrap and refrigerate.
  • Avocado Crema:
  • Place the avocado and sour cream in a blender or small food processor. Process to combine. Add the milk, 1 tablespoon at a time, blending after each addition, until the cream is thick, smooth, and the consistency of mayonnaise. Season to taste with salt and pepper.
  • To serve, place some pork on a tortilla and top with crema and salsa.
