Cilantro & Mint Cabbage Coleslaw

  • 2 cups green cabbage, finely shredded
  • 1 cup red cabbage, finely shredded
  • ½ cup green onions, finely sliced
  • 2 red bell peppers, seeded and finely sliced
  • ¼ cup fresh cilantro, minced
  • ¼ cup fresh mint, finely chopped
  • ½ cup San-J Tamari Peanut Salad Dressing
  • 3 Tablespoons roasted peanuts, finely chopped

Cooking Instructions

Servings: 6

In a medium serving bowl, combine the cabbage, green onions, bell peppers, cilantro and mint. Toss thoroughly with San-J Tamari Peanut Salad Dressing. Chill for several hours and garnish with the roasted peanuts.
