  • 2 tablespoons maple syrup
  • 2 tablespoons coconut oil
  • ½ cup shredded coconut
  • ½ cup pumpkin seeds
  • ½ cup chopped almonds
  • ¼ white sesame seeds
  • 1 cup SAN-J Cocoa Premium Koji Granola
  • ½ cup dried cherries or cranberries
  • ½ cup dried apricots chopped
  • 2 cups bittersweet chocolate chips

Directions

  • Preheat oven to 250°F. Line a baking sheet with parchment paper.
  • Melt maple syrup and coconut oil together. Combine coconut, pumpkin seeds, almonds, and sesame seeds with the maple syrup mixture. Toss well to coat. Spread in an even layer on the baking sheet and cook for 30 minutes, stirring occasionally. Remove from oven, combine with granola and dried fruit.
  • Melt chocolate chips in the microwave in 30-second intervals, stirring until smooth.
  • Pour melted chocolate onto parchment lined baking sheet about ¼-inch thick. Sprinkle granola mixture on top, pressing lightly into the chocolate. Refrigerate for 3 hours or until cold. Break into pieces, store in an airtight container in the refrigerator.
