  • 4 large apples Honeycrisp or Fuji work well
  • ½ cup SAN-J Original Premium Koji Granola
  • ¼ cup chopped pecans or walnuts optional
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 2 tablespoons maple syrup
  • 1 tablespoon melted coconut oil
  • 1 teaspoon pure vanilla extract
  • ½ cup hot water
  • Yogurt ice cream, or whipped cream, or dairy-free options

Directions

  • Preheat oven to 350°F. Core the apples, making sure not to cut through the bottom, creating a well for the filling.
  • In a bowl, mix the SAN-J Original Premium Koji Granola, nuts, cinnamon, nutmeg, maple syrup, coconut oil, and vanilla extract until combined.
  • Stuff each apple with the granola mixture, pressing gently to fill.
  • Place apples in a baking dish and pour ½ cup hot water into the bottom of the dish.
  • Cover loosely with foil and bake for 25 minutes. Remove the foil and bake for another 10-15 minutes until the apples are tender.
  • Serve warm as is or with a dollop of yogurt, ice cream, or whipped cream.
