Directions
Preheat oven to 350°F. Core the apples, making sure not to cut through the bottom, creating a well for the filling.
In a bowl, mix the SAN-J Original Premium Koji Granola, nuts, cinnamon, nutmeg, maple syrup, coconut oil, and vanilla extract until combined.
Stuff each apple with the granola mixture, pressing gently to fill.
Place apples in a baking dish and pour ½ cup hot water into the bottom of the dish.
Cover loosely with foil and bake for 25 minutes. Remove the foil and bake for another 10-15 minutes until the apples are tender.
Serve warm as is or with a dollop of yogurt, ice cream, or whipped cream.
