Ingredients

  • 1 cup pitted Medjool dates
  • ¾ cup SAN-J Matcha Premium Koji Granola
  • 2 tablespoons almond butter or sunflower seed butter for nut-free
  • 1 tablespoon maple syrup
  • 1 teaspoon matcha powder
  • ¼ teaspoon vanilla extract
  • 1 tablespoon coconut oil melted
  • 1 tablespoon chia seeds optional, for extra fiber and omega-3s
  • 2 tablespoons shredded coconut for rolling

Directions

  • In a food processor, blend dates until they form a paste.
  • Add SAN-J Matcha Premium Koji Granola, almond butter, maple syrup, matcha powder, vanilla, coconut oil, and chia seeds. Pulse until the mixture comes together.
  • Scoop out small portions and roll into balls using your hands. If sticky, wet your hands slightly.
  • Roll in shredded coconut.
  • Place in the refrigerator for at least 30 minutes to firm up.
  • Store in an airtight container in the fridge for up to 1 week, or freeze for longer storage.
