- 1 pound fresh spinach cleaned
- ½ cup San-J Thai Peanut Sauce
- 2 Tablespoons roasted peanuts finely chopped
Directions
- Blanch the spinach by placing the leaves in a large pot of boiling water, pushing the leaves under the water completely. Cook for 20 seconds.
- Remove, drain and cool under cold running water. Squeeze the excess water out by hand and place in a medium serving bowl.
- Add the San-J Thai Peanut Sauce and toss lightly but thoroughly to coat. Garnish with the chopped peanuts.
