- 2 packages frozen udon noodles
- 2 tbsp cooking oil, such as avocado oil or grapeseed oil
- 1/2 lb pork belly or pork shoulder, thinly sliced
- 1 small onion, thinly sliced
- 1 medium carrot, cut into thin matchsticks
- ground black pepper to taste
- 1 tbsp toasted sesame oil
Sauce
- 2 tbsp San-J Tamari Soy Sauce
- 1 tbsp mirin
- 1 tbsp sake
Topping
- bonito flakes
Directions
- Cook the frozen Udon noodles according to the instructions, drain and rinse well and set aside.
- In a small bowl, combine all the sauce ingredients and set aside.
- Heat the cooking oil in the pan over medium high heat, add the pork slices and stir fry until they are cooked through.
- Add the onion and sauté for about 1 minute.
- Add the cabbage, bell pepper and carrots and stir-fry for another 2-3 minutes or until they are crisp tender.
- Add the cooked udon noodles to the sauteed vegetables. Stir-fry the noodles, tossing with chopsticks or tongs to combine with the vegetables.
- Add the sauce mixture and toss well until the noodles are coated well with the sauce.
- Stir fry over high heat for another 30 seconds.
- Add black pepper to taste and pour sesame oil.
- Toss the noodles and transfer it onto serving plates and top with bonito flakes.
