Electric Pressure Cooker Method
- 1 tbsp Cooking oil
- 1 lb Pork shoulder
- 1/2 cup Water
- 1/4 cup San-J Shoyu or San-J Tamari Soy Sauce
- 1/4 cup Sake
- 3 tbsp Sugar
- 1/2 tbsp Garlic, grated
- 1/2 tbsp Fresh ginger, grated
- Green onion, about 5 inches of green part
Stovetop Method
- Oil
- 1 lb Pork shoulder
- 1 1/2 cups Water
- 1/2 cup San-J Shoyu or San-J Tamari Soy Sauce
- 1/2 cup Sake
- 1/2 cup Mirin
- 2 1/2 tbsp Sugar
- 1/2 tbsp Garlic, grated
- 1/2 tbsp Fresh ginger, grated
- Green onion, about 5 inches of green part
Directions
Electric Pressure Cooker Method
- Heat oil in an electric pressure cooker (such as an Instant Pot®), using a sauté function. Once hot, sear all sides on the pork until the surface turns nice golden brown. Turn off the Sauté function.
- Add the rest of the ingredients to the pot, attach the lid, and pressure cook at high for 20 minutes. When the cooking cycle is complete, let the pressure naturally release completely until it’s safe to open the lid.
- Discard the green onion. Remove the pork and set it aside. Cook the sauce in the pot using the sauté function until it thickens, about 5 minutes. Put the pork back to the pot and cook it for a few minutes, spoon the sauce over the pork.
- Turn off the cooker, take out the pork, slice it into ¼ inch thickness. Pour the sauce over the sliced pork.
- Serve in hot bowls of ramen, such as Shoyu Ramen. Or dice it for a chashu don (rice bowl).
Stovetop Method
- Heat oil in a cast iron or heavy skillet and sear the pork all sides until golden brown.
- Add all ingredients for the sauce into a pot and heat it till hot.
- Add the seared meat, garlic, ginger, and green onion to the sauce in the pot and cook the meat for 1-2 hours on low heat. Turn off the heat and leave it in the sauce till cooled.
- Remove the pork and set aside. Cook the sauce until it thickens.
- Slice the pork into ¼ inch thickness. Pour the San-J Shoyu mixed sauce over the sliced pork.
- Serve in hot bowls of ramen, such as Shoyu Ramen. Or dice it for a chashu don (rice bowl).
This Japanese braised pork is a perfect accompaniment for serving ramen (try Shoyu Ramen) or diced in a rice bowl for authentic Chaschu Don.
