No Soy Tamari Shrimp and Soba Noodle Salad

Ingredients

  • 5 oz soba noodles
  • 1/2 lb shrimp
  • 1/2 lb snap peas, diced
  • 1/2 lb shiitake mushrooms, diced
  • 2 tbsp ginger, thinly sliced
  • 6 cloves garlic, minced
  • 1/2 lemon, juiced and zested
  • cilantro to taste
  • 4 tbsp San-J No Soy Tamari
  • 2 tbsp sesame oil
  • sesame seeds

Directions

  • Cook soba noodles per instructions, rinse in cold water and set aside.
  • In a medium pan on medium heat, add oil, ginger, garlic, shrimp and 1 tablespoon of the no soy tamari. When shrimp is cooked all the way through, set aside to cool down.
  • In same pan add oil, shiitake mushrooms and 1 tablespoon San-J No Soy Tamari. Cook for 1-2 minutes then set aside to cool down. 
  • In a large mixing bowl combine all ingredients and mix thoroughly. Top it off with lemon zest and enjoy!
