Ingredients

  • 5 mini cucumbers sliced into thin rounds
  • 2 tablespoons peanut butter
  • 1 tablespoon San-J No Soy Tamari
  • 1 tablespoon rice vinegar
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon maple syrup
  • 1 small clove garlic minced
  • 1 tablespoon chili crisp
  • 1–2 tablespoons water to thin, if needed
  • Kosher or fine sea salt to taste
  • 2-3 green onions chopped
  • 1 tablespoon sesame seeds for garnish

Directions

  • Chop cucumbers into thin rounds.
  • Mix peanut butter, tamari, rice vinegar, sesame oil, garlic, chili crisp, and some of the green onions. Mix until smooth, thinning with water of needed.
  • Toss cucumbers with the peanut sauce until coated, top with green onions and sesame seeds.
  • Serve immediately or chill in the fridge.
