½cupSAN-J Original Premium Koji Granolacrushed slightly
2tablespoonsfresh parsleychopped
1tablespoonfresh thyme leaves
1lemonzest finely grated, and juice squeezed
2tablespoonsolive oil
Directions
Preheat oven to 400°F and line a baking sheet with parchment paper.
Season salmon fillets with salt and pepper, then brush the tops with Dijon mustard.
In a bowl, mix SAN-J Original Premium Koji Granola, parsley, thyme, and lemon zest. Drizzle in olive oil and stir to combine.
Press the granola mixture onto the top of each salmon fillet.
Bake for 12-15 minutes or until the salmon flakes easily with a fork.
Drizzle with lemon juice and serve.
