Shrimp and Soba Noodle Salad

Ingredients
- 5 oz soba noodles
- 1/2 lb shrimp
- 1/2 lb snap peas, diced
- 1/2 lb shiitake mushrooms, diced
- 2 tbsp ginger, thinly sliced
- 6 cloves garlic, minced
- 1/2 lemon, juiced and zested
- cilantro to taste
- 4 tbsp San-J No Soy Tamari
- 2 tbsp sesame oil
- sesame seeds
Directions
- Cook soba noodles per instructions, rinse in cold water and set aside.
- In a medium pan on medium heat, add oil, ginger, garlic, shrimp and 1 tablespoon of the no soy tamari. When shrimp is cooked all the way through, set aside to cool down.
- In same pan add oil, shiitake mushrooms and 1 tablespoon San-J No Soy Tamari. Cook for 1-2 minutes then set aside to cool down.
- In a large mixing bowl combine all ingredients and mix thoroughly. Top it off with lemon zest and enjoy!
