- 1 butternut squash cubed
- 1 red onion quartered
- 4-5 carrots
- 4 fresh rosemary sprigs
- salt and pepper to taste
- 1 tablespoon extra virgin olive oil
- 6 bone-in skin-on chicken thighs
- 1 orange halved
- 1/4 cup honey
- 1 tablespoon San-J Organic Tamari 25% Less Sodium Soy Sauce
- 4 cloves garlic minced
Directions
- Preheat oven to 400°F.
- On a large sheet, add the butternut squash, onions, rosemary, and carrots.
- Season vegetables with salt and pepper, then drizzle with olive oil. Toss together. Place chicken pieces between the vegetables.
- Thinly slice half of the orange while juicing the other half into a small bowl. Into the orange juice add the honey, San-J Organic Tamari 25% Less Sodium Soy Sauce, and garlic. Whisk together, then spoon over the chicken before baking for 25 minutes.
- Remove the pan from the oven and baste the chicken with the juices from the pan.
- Place the orange slices around the pan and bake for another 15 minutes, or until the chicken is fully cooked, and the vegetables are tender.
