Quick & Easy, Authentic Japanese
- 1 pound fresh spinach cleaned
- ½ cup San-J Thai Peanut Sauce
- 2 Tablespoons roasted peanuts finely chopped
Blanch the spinach by placing the leaves in a large pot of boiling water, pushing the leaves under the water completely. Cook for 20 seconds.
Remove, drain and cool under cold running water. Squeeze the excess water out by hand and place in a medium serving bowl.
Add the San-J Thai Peanut Sauce and toss lightly but thoroughly to coat. Garnish with the chopped peanuts.
