- 2 tbsp vegetable oil
- 1 pound ground chicken
- 1 red bell pepper, diced
- ½ cup grated carrots
- 4 green onions, chopped, white and green parts separated
- ¾ cup San-J Szechuan Sauce
- bibb or romaine lettuce cups
- ½ cup peanuts, chopped
Directions
- Heat oil in a large skillet. Add chicken and cook, stirring occasionally, until starting to brown, about 5 minutes.
- Add the pepper, carrots, and white part of the green onions. Cook until the peppers start to soften, about 5 minutes.
- Add the sauce, lower the heat and simmer until everything is hot and evenly coated.
- Serve in lettuce cups garnished with the green parts of the green onions and peanuts.
