Spicy Chicken Lettuce Wraps

  • 2 tbsp vegetable oil
  • 1 pound ground chicken
  • 1 red bell pepper, diced
  • ½ cup grated carrots
  • 4 green onions, chopped, white and green parts separated
  • ¾ cup San-J Szechuan Sauce
  • bibb or romaine lettuce cups
  • ½ cup peanuts, chopped


  • Heat oil in a large skillet. Add chicken and cook, stirring occasionally, until starting to brown, about 5 minutes.
  • Add the pepper, carrots, and white part of the green onions. Cook until the peppers start to soften, about 5 minutes.
  • Add the sauce, lower the heat and simmer until everything is hot and evenly coated.
  • Serve in lettuce cups garnished with the green parts of the green onions and peanuts.
