Ingredients

  • 2 packages frozen udon noodles
  • 2 tbsp cooking oil, such as avocado oil or grapeseed oil
  • 1/2 lb pork belly or pork shoulder, thinly sliced
  • 1 small onion, thinly sliced
  • 1 medium carrot, cut into thin matchsticks
  • ground black pepper to taste
  • 1 tbsp toasted sesame oil

Sauce

  • 2 tbsp San-J Tamari Soy Sauce
  • 1 tbsp mirin
  • 1 tbsp sake

Topping

  • bonito flakes

Directions

  • Cook the frozen Udon noodles according to the instructions, drain and rinse well and set aside.
  • In a small bowl, combine all the sauce ingredients and set aside.
  • Heat the cooking oil in the pan over medium high heat, add the pork slices and stir fry until they are cooked through. 
  • Add the onion and sauté for about 1 minute.
  • Add the cabbage, bell pepper and carrots and stir-fry for another 2-3 minutes or until they are crisp tender.
  • Add the cooked udon noodles to the sauteed vegetables. Stir-fry the noodles, tossing with chopsticks or tongs to combine with the vegetables.
  • Add the sauce mixture and toss well until the noodles are coated well with the sauce.
  • Stir fry over high heat for another 30 seconds.
  • Add black pepper to taste and pour sesame oil.
  • Toss the noodles and transfer it onto serving plates and top with bonito flakes.
