Ingredients

For croutons:

  • 1 large egg white
  • 2 tbsp olive oil
  • 1/2 baguette, cut into 1/2-cubes
  • 3 tbsp black sesame seeds
  • 1 tsp Kosher salt

For dressing and assembly:

  • 3 tbsp finely grated Parmesan cheese, plus more for serving
  • 2 tsp white miso paste
  • 1 garlic clove
  • 2 large egg yolks
  • 2 tbsp San-J Organic Tamari Soy Sauce
  • 1 tsp Dijon mustard
  • 1/2 cup vegetable oil
  • 3 romaine lettuce hearts, cut into 2-inch pieces

Directions

For croutons:

  • Preheat oven to 350°F and line a rimmed baking sheet with parchment paper. Whisk egg white and olive oil together in a large bowl. Add bread, sesame seeds and salt, and toss to coat. Arrange bread pieces on prepared baking sheet in an even layer. Bake, rotating baking sheet halfway through, until golden-brown, about 15-20 minutes. Set aside to cool completely.

For dressing and assembly:

  • Place Parmesan, miso, garlic, egg yolks, San-J Organic Tamari Soy Sauce and mustard in a small food processor and puree, scraping down the sides as needed, until smooth, about 30 seconds. With the motor running, slowly drizzle in oil until fully combined and thick, about 1 minute.
  • Combine dressing and lettuce in a large bowl and toss to coat. Top with croutons and Parmesan. Serve and enjoy.
Tip: Substitute black sesame seeds with tuxedo sesame seeds or white sesame seeds.
