Ingredients

  • 2 large English cucumbers cut into 2-inch rounds
  • ½ tsp kosher salt
  • ¼ small red onion sliced thin
  • 2 radish, sliced thin
  • 2 tbsp olive oil
  • tbsp rice wine vinegar
  • tbsp San-J Tamari Soy Sauce
  • ½ tsp toasted sesame oil
  • ¼ tsp shichimi togarashi
  • 1 cloves garlic minced
  • 1 (⅛-inch) knob ginger minced
  • 1 tsp toasted sesame seeds

Directions

  • Combine cucumbers and salt in a large resealable bag. Smash cucumbers with rolling pin, breaking into irregularly sized shapes. Transfer to a colander and let drain for at least 5 minutes.
  • Toss drained cucumbers, onion, radishes, olive oil, vinegar, San-J Tamari Soy Sauce, sesame oil, shichimi togarashi, garlic and ginger together in a large bowl until coated. Top with sesame seeds and serve.
