Combine cucumbers and salt in a large resealable bag. Smash cucumbers with rolling pin, breaking into irregularly sized shapes. Transfer to a colander and let drain for at least 5 minutes.
Toss drained cucumbers, onion, radishes, olive oil, vinegar, San-J Tamari Soy Sauce, sesame oil, shichimi togarashi, garlic and ginger together in a large bowl until coated. Top with sesame seeds and serve.
