Sweet Mashed Potatoes with Toasted Walnuts

Ingredients
- 4 large sweet potatoes, baked and skinned
- ¼ cup orange juice
- 4 Tablespoons butter
- 2 Tablespoons San-J Gluten Free Tamari
- ¼ cup walnuts, chopped
Instructions
Servings: 6
In a mixing bowl, mash the baked sweet potatoes and add the orange juice, butter and San-J Gluten Free Tamari. Mix well to combine. Place in a glass baking dish and sprinkle with chopped walnuts. Place under the broiler for about 3 minutes or until the walnuts are toasted.
Baking sweet potato:
Preheat oven to 375°F. Scrub sweet potatoes, prick each sweet potato several times with a fork and wrap loosely in the foil. Be sure the foil is well-sealed. Place on a baking sheet and bake for 30 minutes to an hour, depending on the size of the potatoes, until thoroughly soft.
