Ingredients

  • 5 large English cucumbers cut into 2-inch rounds
  • 1 1/2 tsp kosher salt
  • 1 small red onion sliced thin
  • 1/2 cup olive oil
  • 1/4 cup rice wine vinegar
  • 1/4 cup San-J Tamari Soy Sauce
  • 2 tsp toasted sesame oil
  • 1 tsp shichimi togarashi
  • 4 cloves garlic minced
  • 1 (1/2-inch) knob garlic minced
  • 2 tsp toasted sesame seeds

Directions

  • Combine cucumbers and salt in a large resealable bag. Smash cucumbers with rolling pin, breaking into irregularly sized shapes. Transfer to a colander and let drain for at least 5 minutes. 

  • Toss drained cucumbers, onion, radishes, olive oil, vinegar, San-J Tamari Soy Sauce, 
sesame oil, shichimi togarashi, garlic and ginger together in a large bowl until coated. Top with sesame seeds and serve.
