- 2 large English cucumbers cut into 2-inch rounds
- ½ tsp kosher salt
- ¼ small red onion sliced thin
- 2 radish, sliced thin
- 2 tbsp olive oil
- 1½ tbsp rice wine vinegar
- 1½ tbsp San-J Tamari Soy Sauce
- ½ tsp toasted sesame oil
- ¼ tsp shichimi togarashi
- 1 cloves garlic minced
- 1 (â…›-inch) knob ginger minced
- 1 tsp toasted sesame seeds
Directions
- Combine cucumbers and salt in a large resealable bag. Smash cucumbers with rolling pin, breaking into irregularly sized shapes. Transfer to a colander and let drain for at least 5 minutes.
- Toss drained cucumbers, onion, radishes, olive oil, vinegar, San-J Tamari Soy Sauce, sesame oil, shichimi togarashi, garlic and ginger together in a large bowl until coated. Top with sesame seeds and serve.
